Burkholder Veggies

Original version

  • 3lb pack "california veggies" or "winter vegetables"
  • 16 oz velveeta
  • 1 roll ritz crackers, crushed
  • 1 cube butter

Cook vegetables and drain. Put in a 9x13 pan. Cut velveeta and half of the butter into cubes and sprinkle over top of veggies. Melt the rest of the butter, mix it with the crackers, and sprinkle that over the top. Bake at 350F for 20-30 min.

Variations

It's really good with fresh veggies instead of frozen. Cut them up and cook them - you can steam them, microwave them, whatever - just make sure they are still somewhat tender but not mushy before baking.
